Beef Carrot Soup

My mum taught me how to cook beef carrot soup. I cook for dinner at home. Each of us ate 1 big bowl with rice. Nice !!

Beef Short Ribs with Black Pepper

I cooked this beef short ribs with black pepper for dinner. I got the recipe from Christine's blog. Its very good. Thanks Christine for sharing your recipe with us.

Ingredients :
300 gm beef short ribs (or veal, thinly sliced)
1 onion
1/2 stalk celery
1 tsp minced garlic
1 tsp minced shallot
1 tsp freshly grated black pepper
2 Tbsp chicken stock

Marinade
2 tsp light soy sauce
1 tsp cornflour
1/2 tsp sugar
1 tsp Shaoxing wing
a dash sesame oil
black pepper, to taste

Thickening:
1 tsp light soy sauce
1/2 tsp sugar
2 Tbsp water
1 tsp cornflour

Method:
  1. Rinse short ribs and wipe them dry. Cut into about 2.5cm (1 inch) in length. Blend in marinade for 15 minutes. Heat oil in a frypan over high heat until lightly brown, about 80% done. Make sure to fry briefly in one single layer, not letting them overlap. Set aside, covered.
  2. Heat some oil and sauté onion over medium heat until translucent. Add celery, continue to cook for 3 minutes. Push onion and celery to sides of pan. Add a dash of oil to sauté black pepper, garlic and shallot in the center until aromatic. Stir and combine onion and celery. Pour chicken stock and continue to cook until onion softens. When sauce dries up a bit, toss back short ribs. Turn to high heat. Add thickening, stir quickly and combine well. Cook consistency to your preference. Dish up and enjoy.

Fried Minced Beef with Eggplant & Basil

I cook this minced beef with egg plant & basil. Fairly easy. You can choose to use pork if you dont like beef.


Ingredients :
200g Minced beef or pork
1 Egg plant (cut up into smaller pieces)
1 Handfull basil leave
2 Red chilli (chopped)
2 Garlic (chopped)
2 Tbsp Fish sauce
A pinch of sugar

Method :
-Add oil & fry half the chopped garlic until fragrant then add the eggplant. Add a pinch of salt.
-Cook till the eggplant is soft. Remove from the frying pan.
-Add oil, fry the other half of the garlic & chilli till fragrant, add the minced beef or pork, then add the fish sauce & sugar, when almost cook, add the basil & put back the cooked eggplant & mix well.

Beef Stew

I cook this western style beef stew. Is easy & there's also carrot & celery inside. You can also add potato if you want.


Ingredients :
500g beef shin
1.5tbsp oyster sauce
pepper
1 big onion (cute into big pieces)
3 tbsp tomato sauce
1 tablespoon oyster
1/2 spoon sugar
pinch of salt
400ml water
1 carrot
1 celery
1 potato (opt)

Method :
-Cut beef into big cubes
-Season with oyster sauce & pepper
-Fry onion with some oil
-Add beef & fry for a while
-Add tomato sauce & oyster sauce & continue to fry
-Add water in, add salt & sugar
-Transfer to a slow cooker & cook for 3 hours, then add in the carrot, celery & carrot & cook for another 45mins to 1 hour.
